The Canava Santorini Ouzo & Tsikoudia Distillery and Museum is located in Mesaria, south of Fira.
Canava Santorini Distillery & Museum
Canava has been producing ouzo and tsikoudia since 1974. The adjoining museum opened its doors in 2015 and has been offering guided tours of the distillery and distillation process of these products since.
Ouzo is an aperitif made out of the currants of Santorini’s most common grape variety asyrtiko along with star anise, and in this production, saffron. Other flavors such as mastic, fennel, cinnamon, cardamom, coriander, and cloves can be used. Copper stills are used for distillation.
Tsikoudia is a spirit of distilled grape marc that comes from Santorini’s grape varieties of asyrtiko, aidani, and arthiri. The distillery also produces liqueurs made of cherry, tentura, mastiha, rose, coffee, anise, pear, banana, and parfait d’amour.
The guided tours take visitors through the different rooms of an old village home, the ouzo distillation room, the tsikoudia distillation room, and finally to the cafeteria for the spirit tasting. Products for sale are also available in the cafeteria.
