OENO Π (Oeno P) is a boutique winery in Baxedes Oia, founded by esteemed winemaker Paris Sigalas of the Domaine Sigalas family. Oeno P first opened its doors to visitors in July 2022, offering a tasting room within a reconstructed Sigalas wine cave with a landscaped courtyard right on the Aegean Sea.

The winery focuses on a limited production of high-quality wines, aiming for an annual output of 20,000 bottles. Its small-volume amphorae (750 and 1,600 liters) allow for the separate vinification of selected vineyards. This approach continues the research initiated in 2015 at Domaine Sigalas with the “Seven Villages” project, which involved the separate vinification of Assyrtiko grapes from different villages. The winery uses a traditional Campania vertical press, which is known for its gentleness in pressing the must. (This is they type of press used in making Champagne.)

One of the more notable wines produced by Oeno P is the “Tria Ampelia” (Three Vineyards) from the 2020 vintage. This wine is crafted from grapes sourced from three local vineyards that are over 60 years old; in Fira, Akrotiri, and Megalochori. The wine ferments and matures in clay amphorae for 16 months, resulting in a full-bodied wine with high acidity and intense flavors of ripe citrus, peach, white flowers, sourdough, smoke, wet stone, and honeycomb.

Two tour/tasting options are offered, at 60 and 75€, offering samples of wines from both Oeno P and Domaine Sigalas labels. Tastings are held in their scenic seaside courtyard, are winemaker-led, and are accompanied by plate of local products to snack on. Both tasting options include an amphora cellar tour. Otherwise, wines are available to purchase by the taste, glass, or bottle; and three flight options range from 33-54€. A limited selection of cold food platters are offered to pair with your tasting. Please note that as this is a very small boutique winery, visiting hours and tour availability may vary. Booking ahead through the website is highly recommended.
