Anhydrous Winery (previously known as Avantis Santorini) is the only winery located in Fira, with its restaurant and tasting room only a short 12-minute walk from Fira’s main square. Deriving its name from the ancient Greek term “Anydros,” meaning waterless, this winery stands as a testament to the resilient nature of Santorini’s vineyards. Vines thrive on sea mist alone, eschewing the need for artificial watering.
The winery’s signature wine, the 100% Assyrtiko Anhydrous Icon, is aged in cement egg-shaped tanks. This unique method ensures a consistent temperature, enhancing the wine’s character and complexity. Four other varieties of wine are available as well: Santorini (Assyrtiko, Athiri, Aidani), Afoura (100% Assyrtiko), Grace (Mandilaria, Aidani), and St. Nicolas (Mavrotragano, Μandilaria).
The Anhydrous Cellar Door Restaurant offers traditional but elevated Greek cuisine, and wine tastings featuring wines from both Anhydrous and its sister winery on the island of Evia, Avantis Estate. Its open-air patio, shaded and serene, is perfect for a leisurely meal. For those seeking a more hands-on culinary experience, cooking lessons are available.
Anhydrous Winery also houses an exclusive spa, offering a range of face and body treatments. These treatments incorporate their own grape-based cosmetics, capturing the essence of Santorini’s unique terroir. These cosmetics are also available for purchase on site.
